Mediterranean Couscous with Lamb
Ingredients:
- 2 x Couscous Packets
- 1 Chopped Red Onion
- 1tsp Crushed Ginger
- 1tsp cubed Cucumber
- 1/2 Robot Peppers (1/2 Green Pepper,1/2 Red Pepper, 1/2 Yellow Pepper)
- 1tbs Olive Oil
- 1 Medium Onion Chopped
- 1/2 Cup Mushrooms
- 1 cup sliced fresh spinach
- Baby Tomatoes
- 2,5ml Dried Oregano
- 1 tsp Parsley
- Pnch of Black Pepper
- Feta Cheese
- Green and Black Olives
Meat:

Preparation:
- Bring to boil water with salt to prep couscous. Once cooked put aside to cool down.
- Chop vegetables and put aside
- Marinade lamb and grill in oven till tender
- Meanwhile heat the oil in the saucepan, onion, garlic, chilli, mushrooms, robot peppers, and fry until soft
- Add fried veges in the couscous, add raw vegetables and mix together evenly
- Add parsley, oregano, and black pepper
- Add olives and feta cheese
- Place grilled lamb in the couscous mixture and serve
Side servings: Greek salad. Serves 4-6 people.
